Simple Recipes during Quarantine — Easy Honey Garlic Marinade for Chicken

Eating snacks is cool and all but what about dinner?

I’m currently on Day 3 of “Lockdown” and Trump announced this morning that drugs used to treat malaria and severe arthritis, were approved by the Food and Drug Administration to test as a COVID-19 coronavirus treatment. We’ll see how that goes. I’ve been struggling to adjust to this new lifestyle and it’s tough staying indoors all day especially when you’re a naturally outgoing person.

Anyway, I went to the grocery store yesterday and I noticed that chicken seemed to be popular during quarantine since the poultry section was cleared out. So I walked over to the beef section instead — low and behold, I found a small pack of drumsticks waiting for me next to the ground beef. Score! I grabbed the pack of chicken and a few other things then checked out as fast as I could. The store wasn’t as crowded but it was apparent that people didn’t understand what social distancing meant.

Fast forward, I want to share an easy marinade recipe with you. You can use chicken thighs or chicken drumsticks. But like I said in my previous post, I am not a fancy chef nor did I go to culinary school. Growing up with two younger brothers, I had to learn how to cook so I could feed my brother and myself while my parents were at work or out “gallivanting”.

This recipe is for 5 large chicken drumsticks. I know, I know…this was all I could find at the grocery store.

These are common ingredients that can be found in your pantry!

Honey Garlic Marinade

  • 5 Chicken thighs or 5 Large Chicken Drumsticks
  • 3 cloves of garlic — chopped
  • 1/4 cup of vinegar, I used Braggs Apple Cider Vinegar
  • 1/4 cup of soy sauce
  • 3 tbsp of honey
  • 1/8 cup of water
  • Ground pepper (optional)

Add all ingredients to a bowl and mix.

Add the chicken, cover up the bowl, place it in your refrigerator and allow it to marinate for 30 minutes to an hour. I normally marinate my chicken for more than an hour. It’s up to you.

And there you go, a quick and simple marinade for chicken. After it’s done marinating, remove the chicken from the bowl and discard the liquid. You can either grill the chicken or bake it. If you choose to bake it, place the marinated chicken in an oven safe baking pan or glass baking dish at 350 degrees for an hour.

I find this recipe helpful to people that normally don’t cook at home. Be safe out there!

How I lost 10 lbs in a month — without a gym membership.

Hawaii was a month away so I needed to act fast. Unfortunately, my trip to the islands had to be cancelled due to the Coronavirus pandemic. All I have to say is that it’s been a crazy 2020 thus far. Especially with the loss of Kobe Bryant, his daughter Gianna and seven others who passed away in that helicopter crash. I have to admit, I’m still having a tough time accepting it, plus I haven’t completely gotten over the death of Nipsey Hussle either.


Moving forward, I wanted to share my workout routine with you. From the beginning to the end. I’m not fitness instructor nor am I a personal trainer. I don’t even work at a gym! 🤣 But if you plan on following my routine, awesome! Remember to move slowly first then gradually increase your sets.

Please consult your physician before beginning this or any exercise program! As with any exercise program, if at any point during your workout you begin to feel faint or dizzy, or have physical discomfort, you should stop immediately.

  1. 20 minutes of stretching — arms, legs, your ass, your back ( I will show you how I stretch my back in another post)
  2. 15 minutes of jump rope (best cardio ever) or you can walk on a treadmill for an hour or…
  3. Do Burpees – 15 to 20 of them to get your heart going. Or…
  4. Shadow box! But if you have a heavy bag, that’s awesome! Put on your hand wraps, your gloves and be ready to punch the bag. Hit the bag with straight jabs for 3 minutes without stopping.

  7. 3 sets of 25 stomach crunches.
  8. Squats! This is the best exercise to tone your legs and give your butt a lift! I usually do 50 squats per workout. Sometimes more.
  9. Cool down
  10. Meditation

I do highly recommend the HIIT workout. HIIT means, “high-intensity interval training.” This is when you go ALL OUT. It sort of feels like you’re doing cardio level 100. I bet you’re curious to find out what my daily diet is. Basically, I cut down on eating bad carbs (pasta, rice, bread) and replaced it with good carbs (sweet potatoes, quinoa, kidney beans – YUCK) I increased my spinach and kale intake, about 2-3 cups of greens per day. I stopped drinking soda. Whenever I wanted to get my soda fix, I would replace a Coke with sparkling water. I cut off candy! I cut off desserts. I cut off everything that could give me a cavity. I drink LOTS of water.

Working out isn’t just about losing weight or toning your arms. Working out gives you a chance learn your body and be in tune of yourself. To hit your weight loss goal, it takes discipline, determination, persistence, and consistency. Don’t get me wrong, I love the gym. The gym is my safe haven. But I also love saving money too.

I haven’t posted much about my previous travels, I will soon, I promise, but to catch you up on some things, my daughter is suffering from Germinoma, which is a form of Brain Cancer. The severity of the cancer has taken her mobility and most of cognitive function away. She is also suffering from dementia caused by the cancer. Because of this, my daughter is now in a wheelchair and needs assistance when getting from point A to B. Sometimes she’s coherent, but there are days where she mixes me up with her dad or grandma. Sometimes she thinks it’s still June when it’s December. It seems like she’s a totally different person now and I am still coming to terms that she’s not the same. She’s not the Deyzha I knew a year ago who would go running 2 miles with me at the Waterfront.

In August 2018, she underwent brain surgery then she was diagnosed with cancer the month after. We only had two options for treatment. I chose the 2nd option since more kids with Germinoma responded to this treatment as opposed to the first option. On the downside, this specific treatment required 3 cycles of chemotherapy, 9 days straight of 3 high dose chemo drugs, stem cell harvest and a bone marrow transplant.

This treatment also required me to become a nurse overnight. At home I had to flush her central line once a day, draw her blood, and give her injections in the evening. And I HATE NEEDLES. I literally had to suck it up in just a weeks worth of training. I was scared.

I literally had to push my work and social life to the side so I could put all of my focus on her. Honestly, I never had any time to grieve, up until now that it’s almost over and our family can focus on her recovery. But I gotta admit, I have an occasional breakdown where I become a big overdramatic crybaby. You can’t blame me though. I went through a LOT. Anyway, the MRI before her most recent MRI showed that the cancer was going away. So I’m hoping that result still stands.

This is definitely not a trip to New York but it has been a journey. Which is why I decided to share this huge piece of my life with you.
